The Chef Behind Our New Menu

Meet Chef Nick

Chef Nick brings a thoughtful blend of creativity, skill, and real kitchen experience to the Red Barn Café.

His journey began as a line cook at Beef Villa in Elgin, followed by time working alongside his brother at a local pizza shop. From there, he moved into more refined kitchens—training in sushi at PL8 in Barrington under Chef Chris, and later working in downtown Chicago at Radio Anago. He continued to grow within the respected HogSalt restaurant group, spending time at standout spots like Au Cheval and Green Street, and most recently at The Graceful Ordinary in St. Charles. Each experience helped shape his technique and broaden his perspective, ultimately leading him to Goebbert’s, where he now leads the kitchen at the Red Barn Café.

As the middle child in a hardworking family, Nick began cooking at a young age, preparing simple meals for his siblings. His natural creativity quickly evolved into a passion for food that is both visually beautiful and deeply satisfying. He describes his approach as “cooking with his eyes before his heart,” meaning every dish is thoughtfully composed with balance and intention before delivering a warm, comforting experience.

At Goebbert’s, Nick is especially inspired by the opportunity to build a menu centered around fresh, local ingredients—many grown right here on the farm. With the freedom to shape the Red Barn Café’s offerings, he leads the kitchen with care, creativity, and a strong commitment to quality, supported by a team that shares his vision.

While he’s proud of the entire menu, the French Dip is a perfect reflection of his style: house-baked baguettes, freshly carved roast beef, and a rich, scratch-made au jus with porcini mushrooms and red wine. It’s familiar, thoughtfully elevated—just like everything he creates. And if it’s your first visit, you really can’t go wrong—almost every item on the menu features fresh farm ingredients, and every plate is prepared with the same level of care and attention to detail.
